UTSA has opened The Eatery, a new on-campus dining venue at San Pedro I. In addition to providing Roadrunners at the National Security Collaboration Center and School of Data Science with a convenient, delicious dining option, the new café bolsters UTSA’s mission to accelerate the development of its Downtown Campus while contributing to the culture and quality of life in San Antonio’s urban core.
The Eatery is a chef-inspired corporate and higher education dining concept from True Flavors Catering, which was created by renowned chef Johnny Hernandez as well as his brother, successful entrepreneur Mark Hernandez. With nearly three decades of culinary experience in the San Antonio region, the Hernandez family has earned national recognition for catering excellence. The Eatery at San Pedro I, True Flavors’ third permanent location, brings a taste of the elevated dining experience guests have come to expect from the Hernandez Family Brand right to Roadrunners looking for a bite to eat on campus.
Guests try out The Eatery during its soft opening on Wednesday, February 15.
“UTSA Dining continually strives toward redefining the campus dining experience, offering an outstanding variety of high-quality, on-campus dining locations and menu options which cater to all nutritional needs and lifestyles,” said Kevin Price, UTSA senior associate vice president for Housing and Campus Services. “True Flavors’ concept for The Eatery, which brings a chef-inspired menu of healthy, diverse options to campus dining, makes the company an ideal partner for UTSA Dining, and we are thrilled to have them aboard.”
Serving breakfast, lunch and happy hour, The Eatery’s menu includes everything from authentic homemade tacos and juicy burgers to deli-fresh sandwiches and a build-your-own salad bar. With UTSA-themed menu items such as the “Birds Up Sandwich” and “Rowdy Smash Burger,” diners can show their school spirit while eating indoors or on the outside patio overlooking San Pedro Creek.
“We are so excited about the new location on San Pedro Creek and our partnership with UTSA Dining,” said Denise Hernandez, vice president of operations for True Flavors and owner of The Eatery Culinary Group. “Providing jobs that strengthen the community while also making an elevated dining experience accessible to both the local and campus community are values we share with UTSA.”

Throughout the process of conceptualizing, planning and launching The Eatery at San Pedro I, Denise Hernandez worked closely with UTSA Dining to ensure the new location would be a successful, seamless addition to the Roadrunner dining experience as well as an exciting new asset for UTSA and the revitalized San Pedro Creek.
The Eatery is open from 7 a.m. to 7 p.m., Monday through Friday, and welcomes UTSA students, faculty and staff as well as the public.
